Producer: Sheng, a western chef turned farmer. Sheng is originally from Huaqiao, Cambodia, and became a Hong Kong citizen in the 1970s. He worked as a western chef in the early days and turned to farming in the 90s. He is one of the earliest organic farmers in Hong Kong, and is committed to promoting local organic food. In his own farm, he is a chef who does not forget to cook and use fresh ingredients to make meals, combining Chinese and Western food, and entertaining his friends and family. During his tenure at Er O, he was inspired by the flavors of the fish village in Tai O, and created a salted fish XO sauce with dried shrimp and salted fish as the main flavors.

The local people have developed their own recipe, using selected ingredients and salted fish from Tai O to create a sauce with the local flavor of Hong Kong. It can be used in Hong Kong style rice noodle or turnip cake to add more flavor.
